Three Bean Vegetarian Chili

1 cup white beans (pre-soaked)
1 cup black beans (pre-soaked)
1 cup red kidney beans (pre-soaked)
2 onions, fresh and diced
2 tomatoes, fresh and diced
2 cloves garlic, fresh and chopped
1 bunch cilantro, chopped
1 Tb chipotle powder
¼ Tb cumin
1 Tb chili powder
1 Tb salt
½ Tb pepper
1 cup salsa
1 Tb vegetable oil
Tortilla chips or taco shells


  1. Soak the beans in three times their volume of cold water for 6 hours before cooking. Drain and rinse the beans and put them in a large pot with water an inch or two over the beans. Bring the beans to a boil, and then lower the heat and simmer for 60 to 90 minutes, or until the beans are tender.
  2. Chop or dice your vegetables.
  3. Heat oil in heavy large saucepan over medium heat. Add onions; sauté 5 minutes.
  4. Mix in garlic and spices and sauté until fragrant, about 1 minute.
  5. Add beans, tomatoes & salsa.
  6. Simmer over medium heat until heated through and flavors blend, stirring often, about 15-25 minutes.
