Spinach, Blueberry, Pineapple, Pomegranate Molasses, Mint, & Wheat Berry Salad

Wheat Berries 2 cups
Pineapple, Fresh, 1” Diced 1 Ea.
Blueberries, Fresh 2 pints
Baby Spinach, Fresh 6 ounces
Chopped Mint ¼ cup
Daikon Kress Micro Greens 2 Ea.
Pomegranate Molasses 3 ounces
Honey 1 tablespoon
White Balsamic Vinegar
Salt & Pepper to taste
1 ounce

Method

  1. Bring 3 cups of water and the Wheat Berries to a boil, cover, and reduce the heat to medium-low, cooking until the Wheat Berries are tender. Set aside.
  2. Dice the pineapple. Mix the blueberries, pineapple, and daikon greens with the grains.
  3. Chop the mint.
  4. Mix the herb and the grain mixture together.
  5. In a separate bowl, mix the pomegranate molasses, honey, and white balsamic vinegar.
  6. Toss the dressing and the salad.
Nutrition Information per 1 cup serving: 120 calories       2 gm protein       3 gm dietary fiber
