It’s that time of year again. The holidays are just around the corner. It’s a time to celebrate and spend quality time with family and friends. Unfortunately, it’s also a time when many of us go on a feeding frenzy, resulting in those dreaded unwanted pounds around the waistline. With Thanksgiving arriving in just a few weeks, why not try a new simple side dish that will help you stay on track. The creamy texture fools your taste buds to think there is added fat – but there isn’t!

CARROT AND BUTTERNUT SQUASH PUREE

(Serves 6)

Ingredients:
  • 1 pound carrots, peeled and sliced
  • 1 pound butternut squash, peeled and cut into cubes
  • 1/4 cup orange juice
  • 1/8 tsp nutmeg

Preparation:
Steam carrots and squash until tender, about 10-12 minutes. Transfer to a food processor. Add orange juice and nutmeg. Blend until smooth. Season with freshly ground pepper if desired.

Calories: 89, Total Fat: 0.2 gm, Carbohydrate: 19.6 gm, Fiber: 3.3 gm, Protein: 2.2 gm, Cholesterol: 0 mg, Sodium 28 mg
